I have recently started a child nutrition and cooking course and thought where better to share my recipes than here so I will be uploading the dishes I submit for assessment, whether they receive good or bad grades, eeek!
This dish needed to be a feature dish containing a minimum of 3 veggies.
Cheesy spinach and halloumi slices. Serves 2
30g flaked almonds
1 red pepper
1 small onion
160g baby spinach
100g soft cheese
Put the almonds into a medium saucepan over a high heat and toast
lightly until the edges begin to brown. Remove from heat and set
almonds to one side for later.
Add a splash of olive oil to a frying
pan and warm the oil over a medium heat. Slice the halloumi into 4 and
add to the oil. Cook until the halloumi goes on orangey brown on each
Whilst the halloumi is cooking, soften the chopped onion in a
small amount of olive oil, cut the pepper into small cubes and add to
the onion, cooking until the pepper is soft and tender. At this point
add the spinach a handful at a time until it is wilted, mixing it with
the pepper. Once the spinach is completely wilted add the soft cheese
and stir well until everything is well coated.
Place the cooked halloumi slices on a plate, top with the spinach and peppers and finish with the toasted almonds.
It was absolutely delicious and one we will certainly be having again, it ticks the boxes with regard to protein, veg & healthy oils.
